Preheat the grill to medium-high heat or the oven to 375°F (190°C).
In a mixing bowl, combine the olive oil, minced garlic, salt, and pepper.

Rub the salmon fillets with the olive oil mixture.

If using a grill, place the salmon on a piece of aluminum foil and top with lemon slices. Fold the foil into a packet. If using an oven, place the salmon on a baking sheet lined with foil and top with lemon slices.

Grill or bake the salmon for 12-15 minutes, or until the salmon flakes easily with a fork.
Garnish with fresh dill or parsley and serve immediately.
