Ingredients
 
 

  • 2 salmon fillets
  • 2 tablespoons olive oil
  • 1 lemon sliced
  • Salt and pepper to taste
  • 2 cups mixed vegetables broccoli, bell peppers, zucchini
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano

Instructions
 

  • Preheat the grill to medium-high heat.
  • Season salmon fillets with salt and pepper, drizzle with olive oil, and top with lemon slices.

  • Grill salmon for about 4-5 minutes per side, or until cooked through.
  • Meanwhile, preheat the oven to 400°F (200°C). Toss mixed vegetables with olive oil, minced garlic, dried oregano, salt, and pepper in a mixing bowl.

  • Spread the vegetables on a baking sheet and roast for 15-20 minutes, or until tender and slightly charred.

Notes

For extra flavor, marinate the salmon in lemon juice, olive oil, and herbs for 30 minutes before grilling.
Substitute your favorite seasonal vegetables for the sides.
