Ingredients
 
 

  • 2 lbs green beans fresh, ends trimmed and halved
  • 2 tablespoons unsalted butter
  • 1 onion small, finely chopped
  • 3 cloves garlic minced
  • 8 oz mushrooms fresh, sliced
  • 3 tablespoons all-purpose flour
  • 1 ½ cups vegetable broth or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 ½ cups fried onions crispy

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease your baking dish.
  • Blanch the Green Beans: Boil a large pot of salted water. Add green beans and cook for 5 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop the cooking. Drain and set aside.

  • Make the Mushroom Sauce: In a large skillet over medium heat, melt butter. Add the chopped onion and cook until translucent, about 3 minutes. Add the garlic and mushrooms, sautéing until the mushrooms are soft, about 5 minutes. Sprinkle the flour over the mixture and stir to combine. Gradually whisk in the broth until smooth, followed by the heavy cream. Simmer for 5 minutes until the sauce thickens. Season with salt and pepper.

  • Assemble the Casserole: In a large mixing bowl, combine the blanched green beans and mushroom sauce. Toss gently to mix. Transfer the mixture to the prepared baking dish. Sprinkle the crispy fried onions evenly over the top.

  • Bake: Bake in the preheated oven for 25 minutes, or until the casserole is bubbling and the onions are golden brown.
  • Serve: Let the casserole sit for 5 minutes before serving. Enjoy as a warm and comforting side dish to your main course.

Notes

For a lighter version, you can substitute heavy cream with half-and-half or a mixture of milk and sour cream.
Customize your casserole by adding diced cooked bacon, grated cheese, or a pinch of nutmeg to the sauce for extra flavor.
This casserole can be made a day ahead. Prepare up to the baking step, cover, and refrigerate. Add about 5-10 minutes to the baking time if baking from cold.
