Prepare the Simple Syrup:
In a small saucepan, combine sugar, water, and sliced ginger. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
1/2 cup sugar, 1/2 cup water, 1 inch ginger
Remove from heat and let the ginger steep for 10-15 minutes, then remove the ginger slices. Allow the syrup to cool to room temperature.
Blend the Ingredients:
In a blender or food processor, combine the chopped peaches, ginger-infused syrup, and lemon juice. Blend until smooth and fully combined.
1 lb peaches, 1 tablespoon lemon juice
Strain the Mixture (Optional):
For a smoother texture, pour the peach mixture through a fine-mesh strainer to remove any pulp or fibers. Use a spoon to press the mixture through the strainer.
Freeze:
Pour the mixture into a freezer-safe container and cover. Freeze for 3-4 hours, or until firm.
Serve:
Scoop the ginger peach sorbet into dessert bowls. Garnish with fresh mint or basil if desired, and serve with roasted or grilled peach slices for an extra treat.

Notes
Adjust Sweetness: Depending on the ripeness of the peaches, you may want to adjust the sugar level to taste.
Alternative Sweetener: Substitute honey or agave syrup for sugar if preferred, though this may alter the texture slightly.
Storage: Store any leftovers in an airtight container in the freezer. Allow it to sit at room temperature for a few minutes before scooping if it becomes too firm.
