Ingredients
 
 

  • 4 chicken breasts skinless, boneless
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 red bell pepper sliced
  • 1 zucchini sliced
  • 1 red onion cut into wedges

Instructions
 

  • In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.

  • Preheat the grill or grill pan over medium-high heat.
  • Grill the chicken breasts for about 6-7 minutes on each side, or until fully cooked.

  • Toss the vegetables with a bit of olive oil, salt, and pepper, and grill for about 5-7 minutes until tender.

  • Serve the grilled chicken with the grilled vegetables.

Notes

For extra flavor, add a sprinkle of feta cheese or a drizzle of balsamic glaze.
You can use any vegetables you prefer.
