  • 1 whole chicken about 1.5 kg
  • 4 cups chicken broth
  • 2 cups jasmine rice
  • 4 cloves garlic minced
  • 1 piece ginger 2 inches, sliced
  • 2 tbsp vegetable oil
  • 1 cucumber sliced
  • Fresh cilantro for garnish

For dipping sauces:

Soy sauce mixture:

  • ¼ cup soy sauce
  • 2 tbsp chicken broth
  • 1 tsp sugar

Chili sauce:

  • 4 red chilies
  • 2 cloves garlic
  • 2 tbsp vinegar
  • 1 tbsp sugar

Ginger sauce:

  • 4 tbsp ginger grated
  • 2 tbsp vegetable oil
  • 1 tsp salt

Instructions
 

Prepare the chicken:

  • In a large pot, bring water to a boil and add the whole chicken. Add slices of ginger and garlic. Poach the chicken for about 30-40 minutes until cooked through.

  • Remove the chicken from the pot and let it cool. Reserve the chicken broth for cooking the rice and making the soy sauce mixture.

Cook the rice:

  • Rinse the jasmine rice and drain.

  • In a rice cooker, heat vegetable oil and sauté minced garlic until fragrant. Add the rice and stir to coat with oil.
