  • ½ can corn drained
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1 tbsp fresh parsley chopped
  • 1 lemon cut into wedges for serving
  • 1 tsp olive oil for drizzling

Instructions
 

Prepare the Mushroom ‘Chorizo’:

  • In a food processor, combine the mushrooms, walnuts, rehydrated dried tomatoes, garlic, cumin, smoked paprika, black pepper, cayenne, and sea salt.
    250 g mushrooms, 180 g walnuts, 6 dried tomatoes, 1 clove garlic, 1 tsp ground cumin, 1 tsp smoked paprika, 1/4 tsp freshly ground black pepper, 1/4 tsp cayenne pepper, 1/2 tsp sea salt
  • Pulse the mixture until it is evenly chopped and has a texture similar to ground chorizo. Be careful not to over-process; you want a coarse, crumbly consistency.

Cook the ‘Chorizo’:

  • Heat a medium frying pan over medium heat with a drizzle of olive oil.

  • Add the mushroom-walnut mixture to the pan and cook for 5-7 minutes, stirring occasionally, until it becomes golden brown and slightly crispy.

Assemble the Tacos:
