Ingredients
 
 

For the grits:

  • 1 cup grits stone-ground
  • 4 cups water
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • Salt to taste

For the shrimp:

  • 1 pound shrimp peeled and deveined
  • 4 slices bacon chopped
  • 1 small onion diced
  • 2 cloves garlic minced
  • ½ cup chicken broth
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley chopped
  • Salt and pepper to taste

Instructions
 

Prepare the grits:

  • In a saucepan, bring water and milk to a boil. Gradually whisk in the grits.

  • Reduce heat and simmer, stirring occasionally, for about 20 minutes until thickened.
  • Stir in shredded cheddar cheese, butter, and salt to taste. Keep warm.

Cook the shrimp:

  • In a large skillet, cook the chopped bacon until crispy. Remove and set aside, leaving the drippings in the skillet.

  • Return bacon to the skillet, stirring to combine. Season with salt and pepper to taste.
