Ingredients
 
 

  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 400 g cannellini beans 1 can, drained and rinsed
  • 400 g diced tomatoes 1 can
  • 4 cups vegetable broth or chicken
  • 1 cup ditalini or other small pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)
  • Parmesan cheese grated (optional, for serving)

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

  • Add the minced garlic, diced carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.

  • Add the pasta and cook until tender, about 10 minutes.

Notes

For a thicker soup, mash some of the beans before adding them to the pot.
