Hearty Pasta e Fagioli Soup
A traditional Italian bean and pasta soup, hearty and comforting, perfect for a mason's lunch.

Ingredients
- 2 tablespoons olive oil
- 1 onion finely chopped
- 2 cloves garlic minced
- 2 carrots diced
- 2 celery stalks diced
- 400 g cannellini beans 1 can, drained and rinsed
- 400 g diced tomatoes 1 can
- 4 cups vegetable broth or chicken
- 1 cup ditalini or other small pasta
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
- Parmesan cheese grated (optional, for serving)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.2 tablespoons olive oil, 1 onion

Notes
For a thicker soup, mash some of the beans before adding them to the pot.
