Ingredients
 
 

  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 cup tomatoes diced
  • 1 teaspoon smoked paprika
  • 1 pinch saffron threads
  • 1 ½ cups short-grain rice such as Arborio
  • 4 cups chicken broth
  • ½ cup white wine
  • ½ pound chicken thighs cut into bite-sized pieces
  • ½ pound shrimp peeled and deveined
  • ½ pound mussels cleaned
  • 1 cup peas frozen
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)
  • Lemon wedges for serving

Instructions
 

  • Heat olive oil in the paella pan over medium heat. Add onion, garlic, and bell pepper, cooking until soft.

  • Stir in tomatoes, smoked paprika, and saffron. Cook for 2-3 minutes until fragrant.
