Moqueca

Ingredients
- 500 g white fish fillets such as cod or tilapia, cut into chunks
- 2 tbsp lime juice
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 large onion chopped
- 4 cloves garlic minced
- 2 bell peppers red and green, sliced
- 4 tomatoes chopped
- 1 cup coconut milk
- 1 cup fish stock
- 1 tbsp paprika
- ¼ cup fresh cilantro chopped
Instructions
Marinate the fish:
- In a bowl, season the fish chunks with lime juice, salt, and pepper. Let it marinate for about 10 minutes.500 g white fish fillets, 2 tbsp lime juice, Salt and pepper to taste
Cook the aromatics:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.2 tbsp olive oil, 1 large onion, 4 cloves garlic
Add vegetables and spices:
- Add the sliced bell peppers and chopped tomatoes to the pot. Cook for about 5 minutes until the vegetables start to soften.2 bell peppers, 4 tomatoes
- Stir in the paprika.1 tbsp paprika
Add liquids:
- Pour in the coconut milk and fish stock. Bring to a simmer.1 cup coconut milk, 1 cup fish stock
Cook the fish:
- Gently add the marinated fish chunks to the pot. Simmer for about 10 minutes, or until the fish is cooked through and the flavors meld together.
Serve:
- Garnish with fresh cilantro and serve hot, ideally with rice.1/4 cup fresh cilantro
Notes
For an added layer of flavor, you can use a combination of fish and shrimp.
