Ingredients
 
 

  • 500 g white fish fillets such as cod or tilapia, cut into chunks
  • 2 tbsp lime juice
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 bell peppers red and green, sliced
  • 4 tomatoes chopped
  • 1 cup coconut milk
  • 1 cup fish stock
  • 1 tbsp paprika
  • ¼ cup fresh cilantro chopped

Instructions
 

Marinate the fish:

  • In a bowl, season the fish chunks with lime juice, salt, and pepper. Let it marinate for about 10 minutes.

Cook the aromatics:

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.

Add vegetables and spices:

  • Add the sliced bell peppers and chopped tomatoes to the pot. Cook for about 5 minutes until the vegetables start to soften.

  • Stir in the paprika.

Add liquids:

  • Pour in the coconut milk and fish stock. Bring to a simmer.

Cook the fish:

  • Gently add the marinated fish chunks to the pot. Simmer for about 10 minutes, or until the fish is cooked through and the flavors meld together.

Serve:

  • Garnish with fresh cilantro and serve hot, ideally with rice.

Notes

Adjust the level of heat by adding more or fewer bell peppers.
