Traditional Colombian Ajiaco Soup
A hearty Colombian soup made with chicken, potatoes, and corn, perfect for a comforting dinner.

Ingredients
- 2 boneless skinless chicken breasts
- 6 cups chicken broth
- 2 russet potatoes peeled and diced
- 2 red potatoes peeled and diced
- 2 Yukon gold potatoes peeled and diced
- 1 ear corn cut into chunks
- 1 bunch scallions chopped
- 2 cloves garlic minced
- ¼ cup fresh cilantro chopped
- ½ cup heavy cream
- ½ cup capers
- ½ cup fresh parsley chopped
- Salt and pepper to taste
- 1 avocado sliced (optional)
- Lime wedges optional
Instructions
Cook the chicken:
- In a large pot, bring 6 cups of chicken broth to a boil. Add 2 boneless, skinless chicken breasts and reduce heat to a simmer. Cook for about 20 minutes until the chicken is cooked through. Remove chicken and shred.6 cups chicken broth, 2 boneless
Cook the potatoes and corn:
- Add the diced potatoes and corn chunks to the pot with the chicken broth. Cook for about 20 minutes until the potatoes are tender.2 russet potatoes, 2 red potatoes, 2 Yukon gold potatoes, 1 ear corn
Add scallions, garlic, and cilantro:
- Stir in chopped scallions, minced garlic, and chopped fresh cilantro. Cook for another 10 minutes.1 bunch scallions, 2 cloves garlic, 1/4 cup fresh cilantro
Finish the soup:
- Add the shredded chicken back into the pot. Stir in 1/2 cup of heavy cream and season with salt and pepper to taste. Cook for another 10 minutes until everything is heated through.1/2 cup heavy cream, Salt and pepper to taste
Serve:

Use a mix of potatoes to add different textures to the soup.
