Cook the Noodles:
While the broth is simmering, cook the rice noodles according to package instructions. Drain and set aside.

After simmering, strain the broth through a fine-mesh strainer to remove the solids. Return the clear broth to the pot.
Add the Beef Brisket:
Bring the broth back to a simmer and add the thinly sliced beef brisket. Cook until the beef is just done.
