  • 1 lb beef bones preferably marrow bones
  • 1 lb beef brisket thinly sliced
  • 1 large onion halved
  • 4 cloves garlic smashed
  • 1 piece ginger 2 inches, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 1 tablespoon coriander seeds
  • 1 tablespoon fish sauce
  • 8 cups water
  • 8 oz rice noodles
  • cilantro Fresh herbs
  • Thai basil Fresh herbs
  • Bean sprouts
  • Lime wedges
  • chili peppers Sliced
  • Hoisin sauce optional, for serving
  • sriracha optional, for serving

Instructions
 

Prepare the Broth:

  • In a large pot, add the beef bones, onion, garlic, ginger, star anise, cinnamon stick, and coriander seeds.

  • Add 8 cups of water and bring to a boil. Reduce heat and simmer for at least 1.5 hours, skimming any impurities from the surface.

Cook the Noodles:

  • While the broth is simmering, cook the rice noodles according to package instructions. Drain and set aside.

Strain the Broth:
