Ingredients
 
 

  • 10 lbs crawfish live
  • 4 lemons halved
  • 1 cup Cajun seasoning
  • 6 ears corn halved
  • 2 lbs red potatoes small
  • 2 lbs smoked sausage cut into 2-inch pieces
  • 4 cloves garlic peeled

Instructions
 

  • Fill a large pot with water, adding lemons and Cajun seasoning. Bring to a boil.

  • Add potatoes and garlic to the pot, cooking for 10 minutes.
    2 lbs red potatoes, 4 cloves garlic
  • Add corn and sausage, cooking for another 5 minutes.
    6 ears corn, 2 lbs smoked sausage
  • Add the crawfish, stirring gently. Boil until the crawfish turn bright red, about 5-7 minutes.

  • Remove the pot from heat and let the crawfish soak in the seasoned water for an additional 15 minutes.
  • Drain and transfer the crawfish, vegetables, and sausage to a large serving platter or newspaper-covered table.
  • Serve immediately with extra lemon wedges and Cajun seasoning on the side.

Notes

Ensure the crawfish are alive and fresh before boiling.
Adjust the seasoning to your preferred spice level.
