Ingredients
 
 

  • 1 tablespoon olive oil
  • 1 lb chicken thighs cut into bite-sized pieces
  • 1 lb andouille sausage sliced
  • 1 lb shrimp peeled and deveined
  • 1 large onion diced
  • 1 bell pepper diced
  • 3 stalks celery diced
  • 4 cloves garlic minced
  • 2 cups long-grain rice
  • 14.5 oz tomatoes diced
  • 4 cups chicken broth
  • 2 teaspoons Creole seasoning
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon thyme dried
  • 2 bay leaves
  • Salt and pepper to taste
  • 4 green onions chopped
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and sausage, cooking until browned. Remove from the pot and set aside.

  • In the same pot, add onion, bell pepper, celery, and garlic. Sauté until vegetables are tender, about 5 minutes.

  • Stir in the rice, coating it with the vegetable mixture. Cook for 2-3 minutes.

  • Add diced tomatoes, chicken broth, Creole seasoning, paprika, cayenne pepper, thyme, and bay leaves. Stir well.

  • Return the chicken and sausage to the pot. Bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes, until the rice is tender and most of the liquid is absorbed.
  • Add shrimp, green onions, salt, and pepper. Cook for an additional 5 minutes, or until the shrimp is cooked through.

  • Remove bay leaves before serving. Garnish with fresh parsley.

Notes

Adjust the spice level to your preference by modifying the amount of cayenne pepper and Creole seasoning.
Jambalaya can be customized with other proteins like ham or different types of sausage.
