  • 1 tablespoon olive oil
  • 1 lb chicken thighs cut into bite-sized pieces
  • 1 lb andouille sausage sliced
  • 1 lb shrimp peeled and deveined
  • 1 large onion diced
  • 1 bell pepper diced
  • 3 stalks celery diced
  • 4 cloves garlic minced
  • 2 cups long-grain rice
  • 14.5 oz tomatoes diced
  • 4 cups chicken broth
  • 2 teaspoons Creole seasoning
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon thyme dried
  • 2 bay leaves
  • Salt and pepper to taste
  • 4 green onions chopped
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and sausage, cooking until browned. Remove from the pot and set aside.
