This traditional Chinese hot pot is a communal meal where a variety of ingredients like vegetables, meats, and tofu are cooked in a simmering broth right at the table.
Prepare the Broth: In a large pot, bring the broth and water to a simmer. Add ginger, garlic, soy sauce, and chili paste (if using) to flavor the broth. Allow it to simmer for about 10 minutes to meld the flavors.
Set up the Hot Pot: Transfer the broth to your hot pot or portable burner at the table. Set the burner to medium heat to keep the broth simmering gently.
Cook Ingredients: Arrange the prepared vegetables, meats, tofu, and seafood on platters. Place the noodles nearby for quick cooking. Allow everyone to cook their chosen ingredients in the simmering broth using chopsticks or ladles. Each ingredient takes just a few minutes to cook.

If you don’t have an electric hot pot, use a portable burner with a large pot and refill the broth as necessary.
