Ingredients
 
 

  • 8 cups chicken broth or vegetable broth
  • 2 cups water
  • 1 tablespoon ginger thinly sliced
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste or sauce optional for spice
  • ½ cup mushrooms shiitake, enoki, or button
  • 1 block firm tofu cubed
  • 200 g beef pork, or lamb, thinly sliced
  • 1 bunch spinach washed, or bok choy
  • 1 cup napa cabbage chopped
  • 1 cup assorted seafood shrimp, fish balls, etc.
  • 2 packs udon noodles or rice vermicelli
  • Soy sauce sesame oil, and chili sauce for dipping

Instructions
 

  • Prepare the Broth: In a large pot, bring the broth and water to a simmer. Add ginger, garlic, soy sauce, and chili paste (if using) to flavor the broth. Allow it to simmer for about 10 minutes to meld the flavors.

  • Set up the Hot Pot: Transfer the broth to your hot pot or portable burner at the table. Set the burner to medium heat to keep the broth simmering gently.
  • Cook Ingredients: Arrange the prepared vegetables, meats, tofu, and seafood on platters. Place the noodles nearby for quick cooking. Allow everyone to cook their chosen ingredients in the simmering broth using chopsticks or ladles. Each ingredient takes just a few minutes to cook.

  • Serve: Once cooked, transfer the food to dipping bowls. Mix soy sauce, sesame oil, and chili sauce for a dipping sauce and enjoy!
