Toss the cut fries in vegetable oil, salt, and pepper. Spread them out on a baking sheet in a single layer.

Bake in the preheated oven for 20 minutes, flipping halfway through, until golden and crispy.
While the fries are baking, heat the gravy in a saucepan over medium heat until hot.
1 cup beef gravy
Once the fries are ready, place them on a serving plate, sprinkle with cheese curds, and pour the hot gravy over the top.

Notes
For an extra crispy texture, double-fry the potatoes: fry once at a lower temperature to cook through, then again at a higher temperature to crisp up.
Use fresh, squeaky cheese curds for the best results.
