For the crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter

For the filling:

  • 8 oz cream cheese 4 packages, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • 1 tablespoon lemon juice

Instructions
 

  • Prepare the Crust: Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

  • Make the Filling: Using an electric mixer, beat the cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and lemon juice.

  • Bake the Cheesecake: Pour the filling over the cooled crust and smooth the top. Bake for 50-60 minutes or until the center is almost set but still slightly jiggly. Turn off the oven and crack the door open slightly, letting the cheesecake cool slowly for 1 hour.
  • Chill the Cheesecake: After cooling, transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight before serving.
  • Serve: Slice and serve the cheesecake as is, or top with fresh berries or a drizzle of fruit compote.

Notes

To prevent cracks, avoid over-mixing the batter and let the cheesecake cool gradually.
You can add different toppings like caramel, chocolate ganache, or whipped cream for extra indulgence.
Cheesecake freezes well. Wrap slices individually in plastic wrap and freeze for up to 3 months.
