  • 1 cup jasmine rice
  • 6 cups water or chicken broth
  • Salt to taste
  • ½ cup vegetables pickled, such as pickled mustard greens or radish

Instructions
 

  • Rinse the jasmine rice under cold water until the water runs clear.
    1 cup jasmine rice
  • In a large pot, combine the rice and water or chicken broth. Bring to a boil.
    6 cups water
  • Reduce heat to low and simmer, stirring occasionally, for about 45 minutes or until the rice breaks down and the congee reaches a thick, porridge-like consistency.
  • Season with salt to taste.

  • Serve hot, topped with pickled vegetables and optional toppings like green onions, soy sauce, or sesame oil.

Notes

Congee can be made in advance and reheated.
