Fried Chicken:

  • 1.5 pounds Chicken drumsticks and thighs
  • 1 cup Buttermilk or use regular milk with a squeeze of lemon juice as a substitute
  • Salt and pepper to taste
  • 1 cup All-purpose flour
  • ¼ cup Cornstarch for extra crispiness
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • ¼ teaspoon Cayenne pepper optional for heat
  • Vegetable oil for frying

Mashed Potatoes:

  • 4 medium Potatoes peeled and diced
  • 2 tablespoons Butter
  • ¼ cup Heavy cream or milk
  • Salt and pepper to taste

Gravy:

  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 1 cup Chicken broth
  • Salt and pepper to taste

Instructions
 

Marinate the Chicken:

  • In a large bowl, season the chicken with salt and pepper. Pour the buttermilk over the chicken, ensuring it’s fully coated. Marinate in the refrigerator for at least 1 hour.

Prepare the Breading:

  • In another bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, and cayenne pepper (if using).
    1 cup All-purpose flour, 1/4 cup Cornstarch, 1 teaspoon Garlic powder, 1 teaspoon Onion powder, 1 teaspoon Paprika, 1/4 teaspoon Cayenne pepper

Fry the Chicken:

  • Heat oil in a deep skillet over medium heat (to about 350°F/175°C).
    Vegetable oil
  • Remove each piece of chicken from the buttermilk, letting excess drip off, then dredge in the flour mixture, pressing to adhere.
  • Fry chicken in batches for 10-15 minutes per side, until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Make the Mashed Potatoes:

  • In a saucepan, boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, cream, salt, and pepper.

Prepare the Gravy:

  • In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute until smooth.

  • Gradually whisk in chicken broth. Simmer for 3-4 minutes until thickened, seasoning with salt and pepper.

Notes

Breaded Coating Variations: Try adding dried herbs or additional spices to the flour mixture to customize flavor.
Gravy Options: Add a touch of cream to the gravy for extra richness.
