Ingredients
 
 

  • 1 large English cucumber
  • ½ cup cherry tomatoes halved
  • ¼ cup kalamata olives pitted and halved
  • ¼ cup crumbled feta cheese
  • ¼ red onion thinly sliced
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh mint chopped

For the dressing:

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Instructions
 

Slice the Cucumber:

  • Wash and thinly slice the cucumber using a mandoline slicer or a sharp knife to achieve approximately 1/8-inch thick slices.

Combine Ingredients:

  • In a large bowl, add the sliced cucumber, halved cherry tomatoes, halved kalamata olives, crumbled feta cheese, and thinly sliced red onion.

Add Fresh Herbs:

  • Sprinkle the chopped parsley and mint into the bowl.

Prepare the Dressing:

  • In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Season with salt and freshly ground black pepper to taste.

Dress the Salad:

  • Pour the lemon-oregano dressing over the salad mixture. Gently toss to ensure all the ingredients are well coated.

  • Cover the bowl and refrigerate for at least 30 minutes. For best results, let it chill for 1-2 hours to allow the flavors to meld together.

Serve:

  • Before serving, give the salad a good stir to redistribute the dressing. Serve chilled, directly from the bowl or transfer to a serving dish.

  • Add-Ins: For extra crunch, consider adding diced bell peppers or cucumber seeds.
  • Milder Onion Flavor: Soak the red onion slices in cold water for 10 minutes to reduce pungency if desired.
