  • ¼ cup kalamata olives pitted and halved

  • 2 tablespoons fresh mint chopped

For the dressing:

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Instructions
 

Slice the Cucumber:

  • Wash and thinly slice the cucumber using a mandoline slicer or a sharp knife to achieve approximately 1/8-inch thick slices.

  • In a large bowl, add the sliced cucumber, halved cherry tomatoes, halved kalamata olives, crumbled feta cheese, and thinly sliced red onion.

Add Fresh Herbs:

  • Sprinkle the chopped parsley and mint into the bowl.

  • In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Season with salt and freshly ground black pepper to taste.
