  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter melted
  • ½ cup honey
  • 2 large eggs
  • 1 cup buttermilk
  • ¼ cup granulated sugar optional, for extra sweetness

Instructions
 

  • Preheat Oven: Preheat the oven to 400°F (200°C). Grease an 8x8-inch baking pan or a cast iron skillet.
  • Combine Dry Ingredients: In a mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar (if using).

  • Mix Wet Ingredients: In a separate bowl, whisk together the melted butter, honey, eggs, and buttermilk until smooth.

  • Combine Ingredients: Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Do not overmix; a few lumps are fine.
  • Pour and Bake: Pour the batter into the greased pan or skillet, spreading it evenly with a spatula. Bake for 25-30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  • Cool and Serve: Allow the cornbread to cool in the pan for 10 minutes before slicing. Serve warm, drizzled with extra honey if desired.

Notes

Substitute for Buttermilk: If you don’t have buttermilk, mix 1 cup of milk with 1 tablespoon of lemon juice or vinegar and let it sit for 5 minutes.
Serving Tip: This cornbread is delicious on its own, but you can also enjoy it with butter or a drizzle of honey for added sweetness.
Storage: Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
