Oprah’s Honey Cornbread – Southern Comfort

Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter melted
- ½ cup honey
- 2 large eggs
- 1 cup buttermilk
- ¼ cup granulated sugar optional, for extra sweetness
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C). Grease an 8×8-inch baking pan or a cast iron skillet.
- Combine Dry Ingredients: In a mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar (if using).1 cup yellow cornmeal, 1 cup all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon salt, 1/4 cup granulated sugar
- Mix Wet Ingredients: In a separate bowl, whisk together the melted butter, honey, eggs, and buttermilk until smooth.1/2 cup unsalted butter, 1/2 cup honey, 2 large eggs, 1 cup buttermilk
- Combine Ingredients: Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Do not overmix; a few lumps are fine.
- Pour and Bake: Pour the batter into the greased pan or skillet, spreading it evenly with a spatula. Bake for 25-30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the cornbread to cool in the pan for 10 minutes before slicing. Serve warm, drizzled with extra honey if desired.
Notes
Serving Tip: This cornbread is delicious on its own, but you can also enjoy it with butter or a drizzle of honey for added sweetness.
