Ingredients
 
 

  • 12 oz pasta any type
  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 1 zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach leaves
  • Salt and pepper to taste
  • 1 teaspoon oregano dried
  • 1 teaspoon basil dried
  • Parmesan cheese Grated, optional

Instructions
 

Cook the Pasta:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Vegetables:

  • While the pasta is cooking, heat the olive oil in a frying pan over medium heat. Add the diced onion and cook until softened, about 5 minutes.

  • Add the minced garlic and cook for another minute.

  • Add the bell pepper, zucchini, and cherry tomatoes to the pan. Cook for about 7-8 minutes until the vegetables are tender.

  • Stir in the spinach leaves and cook until wilted, about 2 minutes.

Combine and Season:

  • Add the cooked pasta to the pan with the vegetables. Toss to combine.
  • Season with salt, pepper, dried oregano, and dried basil. Toss again to ensure everything is evenly coated.

Serve:

  • Divide the pasta into bowls and sprinkle with grated Parmesan cheese, if using.
