Quick and Hearty Pasta with Veggies Recipe

Ingredients
- 12 oz pasta any type
- 2 tablespoons olive oil
- 1 onion diced
- 2 cloves garlic minced
- 1 bell pepper chopped
- 1 zucchini sliced
- 1 cup cherry tomatoes halved
- 1 cup spinach leaves
- Salt and pepper to taste
- 1 teaspoon oregano dried
- 1 teaspoon basil dried
- Parmesan cheese Grated, optional
Instructions
Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.12 oz pasta
Prepare the Vegetables:
- While the pasta is cooking, heat the olive oil in a frying pan over medium heat. Add the diced onion and cook until softened, about 5 minutes.2 tablespoons olive oil, 1 onion
- Add the minced garlic and cook for another minute.2 cloves garlic
- Add the bell pepper, zucchini, and cherry tomatoes to the pan. Cook for about 7-8 minutes until the vegetables are tender.1 bell pepper, 1 zucchini, 1 cup cherry tomatoes
- Stir in the spinach leaves and cook until wilted, about 2 minutes.1 cup spinach leaves
Combine and Season:
- Add the cooked pasta to the pan with the vegetables. Toss to combine.
- Season with salt, pepper, dried oregano, and dried basil. Toss again to ensure everything is evenly coated.Salt and pepper to taste, 1 teaspoon oregano, 1 teaspoon basil
Serve:
- Divide the pasta into bowls and sprinkle with grated Parmesan cheese, if using.Parmesan cheese
