  • 1 small red onion thinly sliced

  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar optional
  • Salt to taste
  • freshly ground black pepper to taste
  • 2 tablespoons fresh parsley chopped

Instructions
 

Prepare the Cucumbers:

  • Wash the cucumbers thoroughly. Optionally, peel them, leaving some skin for texture.
  • Slice the cucumbers thinly using a sharp knife or mandoline.

Make the Dressing:

  • In a small bowl, whisk together the pumpkin seed oil, apple cider vinegar, sugar (if using), salt, and freshly ground black pepper until well combined.

Assemble the Salad:
