Fritters:

  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 1 teaspoon baking powder

  • ¼ teaspoon garlic powder
  • ½ cup milk
  • 1 large egg
  • 1 tablespoon honey or sugar, for a hint of sweetness
  • 1 ½ cups fresh or frozen corn kernels
  • 2 green onions thinly sliced
  • 1 tablespoon fresh parsley chopped, or cilantro

For Frying:

  • ¼ cup vegetable oil or canola oil

Instructions
 

Prepare the Batter:

  • In a mixing bowl, combine the flour, cornmeal, baking powder, salt, black pepper, smoked paprika, and garlic powder. Whisk until evenly mixed.

Mix Wet Ingredients:

  • In a separate bowl, whisk together the milk, egg, and honey (or sugar) until smooth.

Combine Batter and Add Corn:

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the corn kernels, green onions, and parsley.

Heat Oil:

  • In a large skillet or frying pan, heat the vegetable oil over medium heat. The oil should be hot but not smoking.
    1/4 cup vegetable oil

Cook the Fritters:

  • Spoon 2-3 tablespoons of batter into the pan for each fritter, spacing them apart. Flatten each slightly with the back of the spoon.
  • Fry for about 2-3 minutes on each side or until golden brown and crispy.

Drain and Serve:

  • Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.
  • Serve warm as a snack, side dish, or appetizer.

Notes

Add a Twist: For extra flavor, try adding diced bell pepper or jalapeño to the batter.
Serve with a Dip: These fritters pair well with a tangy dipping sauce like sour cream, ranch, or aioli.
Storage: Leftovers can be refrigerated for up to 2 days. Reheat in the oven or on the stovetop to maintain crispiness.
