Southern-Style Corn Fritters with Fresh Corn & Crispy Crust

Ingredients
Fritters:
- 1 cup all-purpose flour
- ½ cup cornmeal
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon smoked paprika optional
- ¼ teaspoon garlic powder
- ½ cup milk
- 1 large egg
- 1 tablespoon honey or sugar, for a hint of sweetness
- 1 ½ cups fresh or frozen corn kernels

- 1 tablespoon fresh parsley chopped, or cilantro
For Frying:
- ¼ cup vegetable oil or canola oil
Instructions
Prepare the Batter:
- In a mixing bowl, combine the flour, cornmeal, baking powder, salt, black pepper, smoked paprika, and garlic powder. Mix Wet Ingredients:

Combine Batter and Add Corn:

Heat Oil:
- In a large skillet or frying pan, heat the vegetable oil over medium heat. The oil should be hot but not smoking.1/4 cup vegetable oil
Cook the Fritters:
- Spoon 2-3 tablespoons of batter into the pan for each fritter, spacing them apart. Flatten each slightly with the back of the spoon.
- Fry for about 2-3 minutes on each side or until golden brown and crispy.
Drain and Serve:
- Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.
- Serve warm as a snack, side dish, or appetizer.
Notes
Serve with a Dip: These fritters pair well with a tangy dipping sauce like sour cream, ranch, or aioli.
