Ingredients
 
 

  • 1 whole chicken about 1.5 kg
  • 4 cups water
  • 4 slices ginger
  • 2 cloves garlic
  • 2 cups jasmine rice
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt to taste
  • Fresh coriander for garnish

Chili Sauce:

  • 4 red chilies chopped
  • 4 cloves garlic
  • 1 inch ginger
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • Salt to taste

Ginger-Garlic Paste:

  • 2 tablespoons ginger minced
  • 2 tablespoons garlic minced
  • 2 tablespoons vegetable oil

Instructions
 

  • In a large pot, bring water, ginger slices, and garlic cloves to a boil. Add the whole chicken and simmer for 30-35 minutes until cooked through.

  • Remove the chicken and plunge it into ice water to stop the cooking process. Once cooled, cut into serving pieces and drizzle with sesame oil.

  • Rinse the jasmine rice and cook it in the rice cooker using the chicken broth instead of water.
    2 cups jasmine rice
  • For the chili sauce, blend red chilies, garlic, ginger, lime juice, sugar, and salt until smooth.
    1 tablespoon vegetable oil, Salt to taste, 4 red chilies, 4 cloves garlic, 1 inch ginger, 2 tablespoons lime juice, 1 teaspoon sugar
  • For the ginger-garlic paste, heat vegetable oil in a small pan and fry the minced ginger and garlic until golden brown and fragrant.
    2 tablespoons ginger, 2 tablespoons garlic, 2 tablespoons vegetable oil
  • Serve the steamed chicken over the fragrant rice, with the chili sauce and ginger-garlic paste on the side. Garnish with fresh coriander.

Notes

Save the remaining chicken broth for soups or other recipes.
Adjust the spiciness of the chili sauce to your preference by adding more or fewer chilies.
