  • 2 pounds beef chuck roast
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 chipotle peppers chopped in adobo sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon oregano
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • ¼ cup lime juice
  • ¼ cup apple cider vinegar
  • ½ cup beef broth
  • 8 small corn tortillas
  • 1 cup cilantro chopped
  • 1 cup onions diced
  • Lime wedges for serving

Instructions
 

Prepare the Beef:

  • Season the beef chuck roast with salt and pepper.

  • In a skillet, sear the beef on all sides until browned.

Slow Cook:

  • Place the beef in a slow cooker.
