Flavorful Barbacoa Tacos Recipe

Ingredients
- 2 pounds beef chuck roast
- 1 large onion chopped
- 4 cloves garlic minced
- 2 chipotle peppers chopped in adobo sauce
- 1 tablespoon ground cumin
- 1 tablespoon oregano
- 2 teaspoons salt
- 1 teaspoon black pepper
- ¼ cup lime juice
- ¼ cup apple cider vinegar
- ½ cup beef broth
- 8 small corn tortillas
- 1 cup cilantro chopped
- 1 cup onions diced
- Lime wedges for serving
Instructions
Prepare the Beef:
- Season the beef chuck roast with salt and pepper.2 pounds beef chuck roast, 2 teaspoons salt, 1 teaspoon black pepper
- In a skillet, sear the beef on all sides until browned.
Slow Cook:
- Place the beef in a slow cooker.

- Cover and cook on low for 8 hours, or until the beef is tender and shreds easily.
Shred the Beef:
- Remove the beef from the slow cooker and shred it using two forks.
- Return the shredded beef to the slow cooker and mix with the juices.
Assemble the Tacos:
- Warm the corn tortillas in a dry skillet.8 small corn tortillas
- Fill each tortilla with shredded barbacoa beef.
- Top with chopped cilantro and diced onions.1 cup cilantro, 1 cup onions
