Flavorful Tacos with Al Pastor Pork Recipe

Ingredients
For Al Pastor Pork:
- 1 lb pork shoulder thinly sliced
- ¼ cup pineapple juice
- 2 tablespoons white vinegar
- 2 tablespoons achiote paste
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon oregano dried
- 1 teaspoon cumin
- Salt and pepper to taste
For Tacos:
- 8 small corn tortillas
- ½ cup pineapple diced
- ½ cup onion diced
- ¼ cup cilantro chopped
- Lime wedges for serving
Instructions
Marinate the Pork:
- In a mixing bowl, combine pineapple juice, white vinegar, achiote paste, chili powder, garlic powder, dried oregano, cumin, salt, and pepper.1/4 cup pineapple juice, 2 tablespoons white vinegar, 2 tablespoons achiote, 1 tablespoon chili powder, 1 teaspoon garlic powder, 1 teaspoon oregano, 1 teaspoon cumin, Salt and pepper to taste
- Add the thinly sliced pork and mix well to coat.1 lb pork shoulder
- Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.
Cook the Pork:
- Preheat a grill or frying pan over medium-high heat.
- Cook the marinated pork until fully cooked and slightly charred, about 7-10 minutes.
- Remove from heat and let rest for a few minutes before slicing into smaller pieces.
Assemble the Tacos:
- Warm the corn tortillas on the grill or in a pan for about 1 minute per side.8 small corn tortillas
- Fill each tortilla with the cooked al pastor pork.
