For Al Pastor Pork:

  • 1 lb pork shoulder thinly sliced
  • ¼ cup pineapple juice
  • 2 tablespoons white vinegar
  • 2 tablespoons achiote paste
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano dried
  • 1 teaspoon cumin
  • Salt and pepper to taste

For Tacos:

  • 8 small corn tortillas
  • ½ cup pineapple diced
  • ½ cup onion diced
  • ¼ cup cilantro chopped
  • Lime wedges for serving

Instructions
 

Marinate the Pork:

  • In a mixing bowl, combine pineapple juice, white vinegar, achiote paste, chili powder, garlic powder, dried oregano, cumin, salt, and pepper.

  • Add the thinly sliced pork and mix well to coat.

  • Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.

Cook the Pork:

  • Preheat a grill or frying pan over medium-high heat.
  • Cook the marinated pork until fully cooked and slightly charred, about 7-10 minutes.
  • Remove from heat and let rest for a few minutes before slicing into smaller pieces.

Assemble the Tacos:

  • Warm the corn tortillas on the grill or in a pan for about 1 minute per side.

  • Top with diced pineapple, onion, and chopped cilantro.
