  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • 3 eggs large
  • ½ cup coconut milk
  • ¼ cup pandan juice blend pandan leaves with water and strain
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a cake pan.
  • In a mixing bowl, combine the flour, baking powder, and salt. Set aside.

  • In another bowl, beat the butter and sugar until light and fluffy.

  • Pour the batter into the prepared cake pan.
  • Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Pandan leaves can be found at Asian grocery stores.
For an extra touch, sprinkle shredded coconut on top of the cake before baking.
