Ingredients
 
 

  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 cloves garlic minced
  • 1 inch ginger minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions
 

  • Rinse the quinoa under cold water. In a medium pot, bring the water to a boil, add quinoa, reduce heat, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.

  • Heat olive oil in a large skillet or wok over medium-high heat. Add garlic and ginger, sauté for 1 minute.

  • Add bell peppers, zucchini, broccoli, and snap peas. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

  • Stir in soy sauce and sesame oil, cooking for another 2 minutes.

  • Serve the vegetable stir-fry over a bed of cooked quinoa. Sprinkle with sesame seeds.
