Healthy Vegetable Stir-Fry with Quinoa

Ingredients
- 1 cup quinoa
- 2 cups water
- 2 tablespoons olive oil
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 zucchini sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 cloves garlic minced
- 1 inch ginger minced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water. In a medium pot, bring the water to a boil, add quinoa, reduce heat, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.1 cup quinoa, 2 cups water
- Heat olive oil in a large skillet or wok over medium-high heat. Add garlic and ginger, sauté for 1 minute.2 tablespoons olive oil, 2 cloves garlic, 1 inch ginger
- Add bell peppers, zucchini, broccoli, and snap peas. Stir-fry for 5-7 minutes until vegetables are tender-crisp.1 red bell pepper, 1 yellow bell pepper, 1 zucchini, 1 cup broccoli florets, 1 cup snap peas
- Stir in soy sauce and sesame oil, cooking for another 2 minutes.3 tablespoons soy sauce, 1 tablespoon sesame oil
- Serve the vegetable stir-fry over a bed of cooked quinoa. Sprinkle with sesame seeds.1 tablespoon sesame seeds

Notes
For extra protein, add tofu or tempeh.
