  • 4 cups chicken or vegetable broth
  • ½ cup bamboo shoots sliced
  • ½ cup shiitake mushrooms sliced
  • ½ cup firm tofu cubed
  • ¼ cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste
  • 1 teaspoon white pepper
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • 2 eggs lightly beaten
  • 2 green onions sliced
  • 1 tablespoon sesame oil

Instructions
 

  • In a large pot, bring the broth to a boil.
    4 cups chicken
  • Add bamboo shoots, shiitake mushrooms, and tofu. Simmer for 5 minutes.

  • Stir in rice vinegar, soy sauce, chili paste, and white pepper.

  • Add the cornstarch mixture to the pot, stirring constantly until the soup thickens.
