Hearty Lamb Shank Dinner Recipe

Ingredients
- 2 lamb shanks
- 2 tablespoons olive oil
- 1 onion chopped
- 2 carrots chopped
- 2 celery stalks chopped
- 4 cloves garlic minced
- 1 cup red wine
- 2 cups beef broth or lamb broth
- 1 can 14 oz crushed tomatoes
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
Sear the Lamb Shanks:
- Heat olive oil in a large pot or Dutch oven over medium-high heat.2 tablespoons olive oil

- Sear the lamb shanks on all sides until browned, about 5-7 minutes. Remove and set aside.
Cook the Vegetables:
- In the same pot, add the chopped onion, carrots, and celery. Cook until softened, about 5 minutes.1 onion, 2 carrots, 2 celery stalks
- Add the garlic and cook for another 1-2 minutes.4 cloves garlic
Simmer the Lamb:
- Pour in the red wine and scrape up any browned bits from the bottom of the pot.1 cup red wine
- Add the broth, crushed tomatoes, rosemary, and thyme. Stir to combine.2 cups beef broth, 1 can, 1 teaspoon dried rosemary, 1 teaspoon dried thyme
- Return the lamb shanks to the pot, ensuring they are submerged in the liquid.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 2 hours or until the meat is tender and falling off the bone.
Serve:
- Serve the lamb shanks with the sauce and vegetables over mashed potatoes or rice.
