  • 2 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 4 cloves garlic minced
  • 1 cup red wine
  • 2 cups beef broth or lamb broth
  • 1 can 14 oz crushed tomatoes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions
 

Sear the Lamb Shanks:

  • Heat olive oil in a large pot or Dutch oven over medium-high heat.

  • Season the lamb shanks with salt and pepper.

  • Sear the lamb shanks on all sides until browned, about 5-7 minutes. Remove and set aside.

Cook the Vegetables:

  • In the same pot, add the chopped onion, carrots, and celery. Cook until softened, about 5 minutes.

  • Add the garlic and cook for another 1-2 minutes.

Simmer the Lamb:

  • Pour in the red wine and scrape up any browned bits from the bottom of the pot.

  • Serve the lamb shanks with the sauce and vegetables over mashed potatoes or rice.

Notes

This dish can also be cooked in a slow cooker on low for 6-8 hours.
