Lemony Asparagus & Artichoke Pasta with Fresh Herbs
Equipment

Ingredients
Pasta:
- 12 oz linguine or spaghetti
Vegetables and Flavors:
- 1 tablespoon olive oil
- 1 bunch asparagus trimmed and cut into 1-inch pieces
- 1 cup artichoke hearts canned or jarred, quartered and drained
- 2 cloves garlic minced
- 1 large lemon Zest
- 1 large lemon Juice
- Salt and freshly ground black pepper to taste
Fresh Herbs:
- ¼ cup basil leaves fresh, torn
- ¼ cup fresh parsley chopped
Toppings:
- ¼ cup Parmesan cheese grated, optional for extra flavor
- Lemon wedges for serving
Instructions
Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.12 oz linguine
Sauté the Vegetables:
- In a large skillet, heat the olive oil over medium heat. Add the asparagus and cook for 3-4 minutes, stirring occasionally, until it begins to soften.1 tablespoon olive oil, 1 bunch asparagus
- Add the artichoke hearts and minced garlic. Sauté for another 2 minutes until the garlic is fragrant and the vegetables are tender-crisp.1 cup artichoke hearts, 2 cloves garlic
Add Lemon Zest and Juice:
- Reduce the heat to low, then add the lemon zest and juice to the skillet. Stir well, scraping up any browned bits, and season with salt and pepper.1 large lemon Zest, 1 large lemon Juice, Salt and freshly ground black pepper
Combine Pasta and Vegetables:
- Add the drained pasta to the skillet, along with the reserved pasta water, and toss to combine. Let the pasta absorb the flavors for 2-3 minutes over low heat, adding more pasta water if needed to achieve a light sauce consistency.
Add Fresh Herbs:
- Remove from heat and gently toss in the fresh basil and parsley for an added layer of flavor and freshness.1/4 cup basil leaves, 1/4 cup fresh parsley
Serve:
- Divide the pasta among serving plates and garnish with grated Parmesan cheese if desired. Serve with lemon wedges on the side for an extra citrus kick.1/4 cup Parmesan cheese, Lemon wedges
Notes
