  • 2 cups tomato juice
  • 1 cup chicken broth or vegetable broth

  • 4 slices bacon diced
  • ½ pound smoked sausage like andouille or kielbasa, sliced
  • ½ pound shrimp peeled and deveined

For the Seasoning:

  • 1 medium onion finely chopped
  • ½ teaspoon hot sauce adjust to taste
  • Salt and freshly ground black pepper to taste

Instructions
 

Cook the Bacon and Sausage:

  • In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon with a slotted spoon and set it aside, leaving the drippings in the skillet. Add the smoked sausage slices to the pan and cook until browned, about 5 minutes. Remove and set aside with the bacon.

Sauté the Onions:

  • In the same skillet, add the chopped onions to the bacon drippings and sauté until soft and golden, about 5 minutes. This step adds a deep, savory flavor to the rice.

Combine Rice and Liquids:

  • In a medium saucepan, combine the tomato juice, broth, and salt. Add the rinsed rice to the saucepan and bring to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
