Mrs. Robinson’s Soulful Red Rice with Shrimp and Sausage

Ingredients
For the Rice:
- 1 ½ cups long-grain white rice rinsed
- 2 cups tomato juice
- 1 cup chicken broth or vegetable broth
- ½ teaspoon salt
- Freshly ground black pepper to taste
For the Protein:
- 4 slices bacon diced
- ½ pound smoked sausage like andouille or kielbasa, sliced
- ½ pound shrimp peeled and deveined
For the Seasoning:
- 1 medium onion finely chopped
- ½ teaspoon hot sauce adjust to taste
- Salt and freshly ground black pepper to taste

Instructions
Cook the Bacon and Sausage:
- In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon with a slotted spoon and set it aside, leaving the drippings in the skillet. Sauté the Onions:
- In the same skillet, add the chopped onions to the bacon drippings and sauté until soft and golden, about 5 minutes. This step adds a deep, savory flavor to the rice.1 medium onion, 1 1/2 cups long-grain white rice
Combine Rice and Liquids:
- In a medium saucepan, combine the tomato juice, broth, and salt. Add the rinsed rice to the saucepan and bring to a boil. Add Proteins and Seasonings:
- Gently fold the cooked bacon, sausage, and shrimp into the rice. Stir in the hot sauce and season with salt and pepper to taste.
