Soft Gnocchi with Tomato Sauce
Soft, pillowy potato dumplings served with a flavorful tomato sauce, a beloved Italian comfort food.

Ingredients
- 2 large potatoes
- 1 cup all-purpose flour
- 1 egg beaten
- Salt to taste
- 2 cups tomato sauce
- 2 cloves garlic minced
- 2 tablespoons olive oil
- Fresh basil leaves chopped
- Grated Parmesan cheese for garnish
Instructions
Prepare the gnocchi:
- Boil the potatoes in a large pot until tender. Drain and let them cool slightly.2 large potatoes
- Peel the potatoes and pass them through a ricer or mash them until smooth.
- In a mixing bowl, combine the mashed potatoes, flour, beaten egg, and a pinch of salt. Mix until a dough forms.1 cup all-purpose flour, 1 egg, Salt to taste
- Divide the dough into smaller portions. Roll each portion into a long rope and cut into bite-sized pieces.
- Use a fork or gnocchi board to create ridges on each piece.
Cook the gnocchi:
- Bring a large pot of salted water to a boil. Add the gnocchi in batches.Salt to taste
- Cook until the gnocchi float to the surface, then remove with a slotted spoon and set aside.
Prepare the tomato sauce:
- In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.2 tablespoons olive oil, 2 cloves garlic

Serve:
- Toss the cooked gnocchi in the tomato sauce until well-coated.

Notes
For a richer flavor, add a splash of cream to the tomato sauce.
