  • 2 large potatoes
  • 1 cup all-purpose flour
  • 1 egg beaten
  • Salt to taste
  • 2 cups tomato sauce
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • Fresh basil leaves chopped
  • Grated Parmesan cheese for garnish

Instructions
 

Prepare the gnocchi:

  • Boil the potatoes in a large pot until tender. Drain and let them cool slightly.

  • Peel the potatoes and pass them through a ricer or mash them until smooth.
  • In a mixing bowl, combine the mashed potatoes, flour, beaten egg, and a pinch of salt. Mix until a dough forms.

  • Divide the dough into smaller portions. Roll each portion into a long rope and cut into bite-sized pieces.
  • Use a fork or gnocchi board to create ridges on each piece.

Cook the gnocchi:

  • Bring a large pot of salted water to a boil. Add the gnocchi in batches.

  • Cook until the gnocchi float to the surface, then remove with a slotted spoon and set aside.

Prepare the tomato sauce:

  • In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

  • Add the tomato sauce and chopped basil. Simmer for 10 minutes, seasoning with salt to taste.
