  • 2 cups seitan cut into strips
  • 2 bell peppers sliced
  • 2 zucchinis sliced
  • 1 eggplant sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 2 tablespoons soy sauce
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • In a mixing bowl, combine olive oil, smoked paprika, soy sauce, balsamic vinegar, garlic, salt, and pepper.

  • Add the seitan and vegetables to the bowl, tossing to coat evenly.
    2 cups seitan, 2 bell peppers, 2 zucchinis, 1 eggplant, 1 cup cherry tomatoes
  • Let marinate for at least 30 minutes.
  • Preheat the grill or grill pan over medium-high heat.
  • Grill the seitan and vegetables for about 5-7 minutes on each side, until nicely charred and cooked through.
  • Arrange the grilled seitan and vegetables on a serving platter, garnish with fresh parsley.
