  • 4 cups fresh corn kernels about 6 ears of corn
  • 1 cup almond milk
  • 2 tablespoons olive oil
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 red bell pepper finely chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Corn husks from the fresh corn

Instructions
 

Prepare the filling:

  • Blend the corn kernels with almond milk in a blender or food processor until smooth but slightly chunky. Set aside.
