Ingredients
 
 

  • 1 cup kale leaves packed (stems removed), fresh
  • 1 cup spinach packed, fresh
  • ½ cucumber chopped
  • 1 green apple chopped (optional for sweetness)
  • ½ lemon juiced
  • ½ inch fresh ginger peeled and chopped
  • ¼ cup celery stalks chopped
  • ½ cup coconut water for blending, or filtered water
  • Ice cubes optional, for serving

Instructions
 

Prepare Ingredients:

  • Rinse all produce thoroughly. Remove stems from the kale and roughly chop the cucumber, celery, and green apple (if using).

Blend Ingredients:

  • In a high-speed blender, combine the kale, spinach, cucumber, green apple, lemon juice, ginger, celery, and coconut water. Blend on high until smooth.
    1 cup spinach, 1/2 lemon, 1/2 inch fresh ginger, 1/4 cup celery stalks, 1/2 cup coconut water

Strain the Juice (Optional):

  • For a smoother juice, pour the mixture through a fine mesh strainer or cheesecloth to remove the pulp. Use a spoon to press down and extract as much juice as possible.

Serve and Enjoy:

  • Pour the juice into a glass over ice (if desired) and enjoy immediately for the freshest taste.

Notes

Optional Sweetener: Add 1/2 a green apple or a small splash of pineapple juice for a touch of sweetness without adding refined sugar.
Adjust for Texture: If you prefer a thicker smoothie consistency, reduce the amount of water and skip the straining step.
Storage: Green juice is best enjoyed fresh but can be stored in the refrigerator for up to 24 hours in an airtight container.
