Ingredients
  

  • 8 corn tortillas cut into quarters
  • 1 cup salsa red or green
  • ½ cup vegetable oil
  • 4 eggs
  • ½ cup cheese shredded, queso fresco or cheddar
  • ¼ cup sour cream
  • ¼ cup cilantro chopped
  • 1 avocado sliced
  • Salt and pepper to taste

Instructions
 

  • Heat the vegetable oil in a large skillet over medium heat.

  • Fry the tortilla quarters until crispy and golden brown. Remove and drain on paper towels.

  • Remove excess oil from the skillet, leaving about 1 tablespoon. Add the salsa and cook for 2 minutes.

  • Return the crispy tortillas to the skillet and gently toss to coat with the salsa. Cook for another 2-3 minutes.
  • In a separate pan, cook the eggs to your preference (fried or scrambled).

  • Serve the chilaquiles topped with eggs, cheese, sour cream, chopped cilantro, and avocado slices.

  • Season with salt and pepper to taste.

Notes

Customize with additional toppings such as beans, shredded chicken, or sliced jalapeños.
For a healthier version, bake the tortilla chips instead of frying.
