Traditional Mexican Chilaquiles Recipe

Ingredients
- 8 corn tortillas cut into quarters
- 1 cup salsa red or green
- ½ cup vegetable oil
- 4 eggs
- ½ cup cheese shredded, queso fresco or cheddar
- ¼ cup sour cream
- ¼ cup cilantro chopped
- 1 avocado sliced
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat.1/2 cup vegetable oil
- Fry the tortilla quarters until crispy and golden brown. Remove and drain on paper towels.8 corn tortillas
- Remove excess oil from the skillet, leaving about 1 tablespoon. Add the salsa and cook for 2 minutes.1 cup salsa
- Return the crispy tortillas to the skillet and gently toss to coat with the salsa. Cook for another 2-3 minutes.
- In a separate pan, cook the eggs to your preference (fried or scrambled).4 eggs

Notes
For a healthier version, bake the tortilla chips instead of frying.
