  • 17.5 oz black beans soaked overnight
  • 7 oz pork shoulder cut into cubes
  • 7 oz beef brisket cut into cubes
  • 7 oz smoked sausage sliced
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 bay leaves
  • 1 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

For serving:

  • Cooked white rice
  • Orange slices
  • collard greens Steamed

Instructions
 

Prepare the beans:

  • Drain and rinse the soaked black beans. Set aside.

Cook the meats:

  • In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the pork shoulder, beef brisket, and smoked sausage. Brown the meats on all sides.

Add aromatics and beans:

  • Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent.

  • Add the black beans, bay leaves, and enough water to cover the beans and meat.

Simmer the stew:

  • Bring the mixture to a boil, then reduce the heat to low and simmer for about 2 hours, or until the beans are tender and the meats are cooked through. Stir occasionally and add more water if necessary.

Season and serve:

  • Season with salt and pepper to taste. Remove the bay leaves before serving.
