Ingredients
 
 

  • 1 lb minced lamb
  • 1 large onion finely chopped
  • 2 carrots diced
  • 1 cup peas
  • 2 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons flour
  • 4 cups mashed potatoes
  • 4 tablespoons butter
  • ½ cup milk
  • Salt and pepper to taste
  • Fresh parsley chopped (optional, for garnish)

Instructions
 

Prepare the filling:

  • In a large frying pan, cook the minced lamb over medium heat until browned. Remove the lamb from the pan and set aside.

  • In the same pan, add chopped onions, carrots, and minced garlic. Sauté until the vegetables are softened.

  • Add the tomato paste and flour to the vegetables, stirring to combine. Cook for a couple of minutes.

  • Return the browned lamb to the pan, add the peas, beef broth, and Worcestershire sauce. Stir well and bring to a simmer. Cook for 10 minutes until the mixture thickens. Season with salt and pepper to taste.

Prepare the mashed potatoes:

  • Boil the potatoes in a large pot until tender. Drain and return to the pot.
  • Add butter and milk to the potatoes, and mash until smooth and creamy. Season with salt to taste.

Assemble the shepherd’s pie:

  • Preheat your oven to 400°F (200°C).
  • Spread the lamb mixture evenly in a baking dish.
  • Top with the mashed potatoes, spreading them evenly over the filling. Use a fork to create a decorative pattern on top.
  • Bake in the preheated oven for 25-30 minutes, until the top is golden and the filling is bubbling.

Serve:

  • Garnish with fresh parsley if desired. Serve hot.

Notes

For a vegetarian version, substitute the lamb with lentils and use vegetable broth.
Shepherd’s pie can be made in advance and reheated in the oven.
