  • 1 cup dried chickpeas soaked overnight
  • 1 small onion chopped
  • 2 cloves garlic minced
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh cilantro chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon baking powder
  • Salt and pepper to taste
  • Oil for frying

Instructions
 

Prepare the mixture:

  • Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is coarse and holds together.

Form the falafel:

  • Using your hands, form the mixture into small balls or patties.

Fry the falafel:

  • Heat oil in a frying pan over medium-high heat. Fry the falafel in batches until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to transfer the falafel to a plate lined with paper towels to drain excess oil.

  • Serve hot with pita bread, hummus, and fresh vegetables.

Notes

For a healthier option, bake the falafel at 375°F (190°C) for 20-25 minutes, flipping halfway through.
